I’m so glad to know that I’m not the only one totally stressed by meal trains! And usually what ends up happening is I work really hard on the meal for the other family and then have no energy left to make a meal for my family (because I never think to double a recipe). 🤦♀️

This reminds me of one of my all-time fave easy recipes!! (Orzo must shine in this capacity!) And this one is only one pot and can literally be thrown together in under 30 minutes. I often make it dairy-free by using a can of Trader Joe’s coconut cream instead of the heavy whipping cream and the Parmesan is optional. I also like to use Italian sausage instead of ground beef to up the flavor.
Update! Made this Wednesday. It was DELICIOUS and all 3 kids ate it and it made a ton! Leftovers were a hit in a thermos for "hot lunch" the next day too. Would 10/10 make for a Meal Train - love this suggestion!
I do a lot of meal trains, and enchiladas are a go-to for me. They’re easy to make ahead, defrost, bake, and take. Instead of veggie filling, use rotisserie chicken and canned enchilada sauce to make your life easier. Send along a salad or cut up fruit to round out the meal.

Also, P.S. it makes my heart happy for you to claim the title “millennial” because a couple years ago, I reminded you on IG that we are millennials when you said “I need to get a millennial to do it for me” about some hipster tech thing haha. Let’s claim it proudly! (And find a Gen Z-er for whatever tech thing we need.)

I make these enchiladas on repeat. I’ll leave out some of the beans, corn, and sweet potatoes for my picky kids to eat with a tortilla and cheese without the sauce.
